Clifton John Nielsen is a professionally trained Chef speaclizing in French technique and classic American cuisine. Three years after completing culinary school CJ became an executive Chef for Spoonbar in Healdsburg, CA. Prior to working at Spoonbar Chef CJ worked at Diavola a rustic Italian restaurant, Barndiva a Michelin starred French restaurant and was Sous Chef at Bird & the Bottle an Asian Fusion Resturant. Being creative with new ideas and working with local farmers are two of his favorite parts about the culinary field. Aside from cooking chef CJ enjoys bike rides, gardening, playing team sports and spending time with his wife and handful of animals (5 kitty cats, 2 dogs and 2 goats).
With the launch of Twisted Spoon Food Co, CJ plans to establish himself in Northern Arizona as one of the premier chefs showcasing the regions farmers curating a local focused menu with a twist.
